Herb and Kathy Eckhouse are the owners of La Quercia a company that creates artisan prosciutto, based in Iowa. They are a "green" and partially organic company that produces and delivers smoked meats in the traditions of Parma Italy which is prosciutto's origins. They have recently been awarded with the 2007 Bon Appetit award for food artisans. Today they are here to discuss their company and their products.
